No Maple Syrup by 2100?

If you look at about 1 minute 30 seconds into it you will see some maps of how sugar maple/syrup production has changed with warmer weather of the last few decades. Sugar maple trees need cold weather and cannot tolerate pollution. In only a few years these trees have been eliminated from many areas of the US.

    Good video. I think the only maple sap harvesting done still here in Indiana is by the Amish in the northern counties. Clean air and water up there makes the areas along the Michigan state line just a wonderful place to visit - caught my first ever trout using a fly rod up nw of Ft Wayne.

    Note: While shopping for some Shang-Hi bok choy at the international market I stopped by the European area and found some blue-berry syrup from the Adriatic - I will take it down to Mom and Dad in February.
    I know that you are now a vegetarian - but baby bok choy, onions, carrots, snow pea pods, bamboo sprouts and chicken ain't bad...

  2. Love that bok choy your talking about, I do all that you list plus I avoid the bird instead dump in a bunch of celery and at the end almonds, sesame seed. Once in a while I do tofu in it, but not very often, just luke warm on tofu, I like it once in a while.

    I am going to get some lemon grass next time the store has a nice bunch, I have never cooked with it, will try it. Have you used it? Eaten it?
